Lavender-baked apples – A taste of Provence with autumn flavors

Easy to prepare, it highlights one of the most treasured ingredients of the region: PDO fine lavender (Lavandula angustifolia) from the Luberon.

 

Lavender baked apple 

Ingredients (Serves 4 to 6)

  • 1 kg of small fall apples (such as Reine des Reinettes or Chanteclerc)
  • 1 cinnamon stick
  • 1 tablespoon of honey
  • 1 drop of fine lavender essential oil (Lavandula angustifolia)
  • 90 g of light brown sugar
  • 10 cl of water
  • 10 g of white sugar
  • 3 cl of rum

Important: Only use fine lavender essential oil (lavandula angustifolia). Lavandin and spike lavender are not edible and should not be used in cooking.

 

Step-by-Step Instructions

1. Prepare the apples and syrup

Peel the apples and place them side by side in a large pot. Cover with the syrup mixture (water + brown sugar). Add the cinnamon stick and sprinkle with white sugar.

2. Infuse the honey

Combine the honey with one drop of fine lavender essential oil. Fill the center of each apple with this fragrant blend.

3. Cook gently

Cover the pot and simmer over low heat until the apples are soft and tender.

4. Reduce the syrup

Remove the apples carefully. Let the remaining cooking liquid reduce until it turns into a rich syrup.

5. Assemble and flambé

Place the apples in a baking dish, drizzle with the syrup, pour in the rum, and flambé carefully for a refined finish.
